OK here it is as described in detail... A recipe from my friend Wayan Wariani's great new cafe in Ubud, Bali - Space Colonie (

ginger syrup:

500 grams ginger
100 grams lemongrass
750 grams sugar
1.2 liters of water

first food process the ginger & lemon grass
then put in hot water with sugar
stirring, bring to foamy boil
decrease heat till mixture settles
again increase heat till foamy boil occurs again
turn of heat and let cool
strain syrup

to make ginger fizz:

1 shot ginger syrup
1/3 shot fresh lime juice
fill with cold soda water
garnish with lime or lemon grass

enjoy in tropical paridise.
